What weapons are left unlocked as far as people know about?

Excalibur? (Sword)
Guttler? (Axe)
Mjollnir? (Club)
Amanomurakumo? (GK)
Kikoku? (Katana, the one above wasn't level 5)

And I suppose you could include Aegis (Shield).

Yeah I think that's about it.

As far as I know Discordian on Migardsomr has Caliburn (stage 4 sword,) but that's the closest I know to anyone having upgraded sword.

The GK and the Katana aren't fully upgraded yet. If you pay attention, it says "In Dynamis: <weaponskill>" Final stage you can use it outside of Dy.
